Bacon Cabbage Rice

July 28th marked my husbands 32nd birthday. And its a long standing tradition that you pick dinner on your birthday.

Daniel has a favorite I make, and its called Bacon, Cabbage, Rice. I learned the recipe from a friend of mine, and it was THE recipe that got Daniel eating rice again (for those who don’t know, Daniels not a huge fan of rice, but in this dish, he is)

But that wasn’t all he wanted for his birthday. This man wanted like a whole bacon meal! Bacon Cabbage Rice actually turned out to be the side dish. The main dish was BLT’s on Sourdough bread. To say this man loves bacon is an understament in all honesty.

Ingredients:

2lbs Bacon

1/2 head cabbage

1 cup rice

Directions:

Start off by frying the bacon while you cook the rice in a pot. I prefer to chop up the bacon instead of frying it whole. Once the bacon is nice and crisp you can either remove it, or not. I’ve done both. The important step here is to drain a little of the bacon grease, but not all. Try to leave 1 tbsp or so in the pan so that the cabbage can fry in that bacon grease and get some of that bacon flavor. And you don’t need to fry the cabbage too long. Just a couple minutes. Then throw the bacon back in (if you removed it from the pan) and add the rice, letting cook and marry together a couple moments before serving.

I personally, like to drizzle a tiny bit of soy sauce on mine. But my husband loves it as is.

This can be a great side dish, or a great main course as it has your starch, veggie, and protein. You can change it up by adding some onion and garlic for flavor, or make it just as the recipe says.
