How to Prepare Zucchini for Perfectly Moist Bread

I am blessed to know a few gardeners in my life. And these gardeners, can plant zucchini and get them to grow so large about the only thing to do with them is baking bread.

You can do this two different ways. with a kitchen aid attachment, I have the one that slices and shreds. Typically, I’ll use that if I’m shredding zucchini.

You could also do a handmade grater. I’ve done it this way before. For one zucchini its not too bad, but if your making numerous batches of shredded zucchini for bread, you might wanna find a better alternative.

What is it used for?

Grated zucchini is mostly used for baking. I for example, like making zucchini muffins with them. This last batch I made double chocolate zucchini muffins.

And if you don’t want Muffins, you can just put that same batter in a bread pan and make Zucchini bread with it too. Its a really great way to get your kids to eat their veggies, sometimes without realizing it.

My son had one for breakfast all this week, never once realizing it had Zucchini in it. Its also one of the easiest veggies to freeze. Grate, drain and dry, and zip and freeze! And it lasts a while too!

Why Shred zucchini?

As a former and sometimes still a picky eater, shredding the zucchini was one of the first ways I learned to like it was when I was a child, eating zucchini bread. I couldn’t see the zucchini, nor could I taste it, and the bread I was eating had chocolate chips in it, which was always a bonus.

When you shred the zucchini, it also makes it easier to add in smoothies for a great nutrient boost since Shredding the zucchini helps retain its nutrients.

Can it be frozen?

yes! In fact, Zucchini is probably one of the easiest things to freeze! You simply shred it, drain as much moisture out of it as possible, and then measure out how much you want in each bag. I will typically freeze 2-3 cups at a time, since that’s typically what a recipe will call for. When I made Zucchini Muffins, I took out the Zucchini a day before making the muffins, to ensure that it had time to thaw. I drained it again if the recipe called for it and used it just as I would if it were freshly grated.

All in all, Zucchini is a great veggie to bake with if your struggling to get in your daily veggies for yourself, or your children. You can make many different baked goods with it, so your possibilities are endless!
