Layers of Love: Making My Daughter’s Birthday Extra Sweet

There has only been 1, maybe 2 years in which I have not made my daughters birthday cake. Primarily it started because I couldn’t afford a big fancy store cake in addition to getting her birthday gifts. It was a tradition that started simply because I couldn’t afford both, but also a tradition I grew to love.

Every year, I’ll ask what kind of cake she wants and some years she has very simple requests, other years, she has more elaborate ones. This is probably one of the most elaborate ones she has requested so far. A Boston cream cake. So after looking at a few different versions, I chose one of the easier versions, put my own spin on it and am ready to attempt it.

The process is easy. Make cake, poke holes, make and pour pudding, let sit and add chocolate frosting. Weather or not it will be that easy we will be finding out.

Ingredients:

  • Boxed Cake mix (yellow)
  • Box pudding
  • 1 cup Heavy Cream
  • 1 cup Chocolate chips

Directions:

First things first you will want to make your cake via the box instructions. There are other ways of making a boxed cake mix, such as using milk, but I just did what the box said. I also used a 13×9 pan, because doing two round cakes just seemed a bit more difficult.

The next step is to let the cake completely cool before you poke holes in it. This is going to be a very time consuming cake to make. This is going to be around the time you want to make the pudding. You want the pudding to set on the cake, so making it too soon could cause it to set before we are ready. I made my pudding just after I had all the holes poked into the cake. This way, it poured really easily over the cake, and I used a spatula to even things out.

If you own a microwave, it is perfectly acceptable to used canned frosting and just warm it up a tad to where its pourable over the cake. I however, do not own a microwave, so I chose the chocolate chip and heavy cream mixture, a 1:1 Ratio of each, and a double broiler method.

What is a double broiler?

A double broiler is a type of cookware that uses steam as a heat source to melt or cook food. Often times, you will find someone creating one with a pot and metal bowl, putting water in the pot and cooking the food or melting the food inside the metal bowl.

In my case, I will be melting the chocolate and incorporating the heavy cream inside the metal bowl and stirring it with a metal whisk until it is all mixed together. When the cream and chocolate is combined, and is a nice milk chocolate color, take it off the heat and let it cool for 5-10 minutes before pouring it all over the cake. Make sure you spread it evenly so the entire cake is covered, and then refrigerate until you are ready to serve.
