Banana Oatmeal Muffins for Busy Mornings

Daniels not much of a breakfast eater. However, he has hypoglycemia, so he NEEDS to eat before he rides his motorcycle to work. Hes usually pretty good about scarfing down a bowl of oatmeal, but I knew it wasn’t very ideal for him because of everything he has to do before he leaves.

But then I remembered our cook from where I work- she used to make oatmeal muffins for the kids because lets face it, no kid is going to be exited for plain oatmeal. I remembered this and decided to make some for Daniel. They’d be perfect grab and go breakfast while he’s gathering his stuff, or even if he runs out of time and can’t eat, its something he could take with him and eat when he gets there.

Ingredients:

  • 2 Overripe Bananas
  • 1 cup Oats
  • 1/2 tsp baking powder
  • 1tbsp water (or milk)

Directions

Mix everything together. Preheat oven to 350, bake for 15-18 minutes, or until edges are golden brown and toothpick comes out clean.

NOTES:

  • Add dried fruit or nuts for extra flavor
  • Grind up oats in food processor to make oat flour if desired
