Fresh Tomato Cucumber Salad

Well, the heat is here to stay for a while, so prepare yourselves for my Summer Food Series. This recipe is a new one in my book, thanks to my Aunt. It was under sad terms, a death in the family, but it was a memory I’ll never forget. We got into town in the evening, and my aunt had made dinner, and with dinner, she made this amazing salad.

If you know anything about who I was as a child, you’ll know that Fruits and Veggies, were not my thing. To this day I’ve warmed up to veggies some, fruits I’m still not a fan of. This salad surprised me. Not only did I like it, I LOVED IT! And that’s saying something, especially considering it has tomatoes in it.

This is another recipe that’s easy for your kids interested in learning how to cook. This is a simple one for them to learn about knife safety.

Ingredients:

  • 2 Cucumbers
  • 1-2 Tomatoes (I don’t like them, so I don’t add much)
  • Garlic Salt, Pepper
  • Mayonnaise

Directions:

Start by cutting the cucumber lengthwise. Your gonna wanna scrape the seeds out. I’ve noticed if you leave the seeds in, it gets way to liquid for my preference. This is an important step I never forget to do.

Do the same with the tomatoes. I suggest a bigger tomato, like a Roma or beefsteak. The seeds are much easier to get out than the cherry or grape tomatoes. Again. We don’t want the seeds cause they will make the salad liquidy.

Once you have your tomato/cucumber mixture in a bowl, its time to dress it. Now, I’m going to preface by saying I do know there is better ways of doing this. But this is how I do it, cause it works for me. So I get my mayonnaise and give a dollop of mayonnaise and go from there. Some people like more mayo, others not so much, so add mayo until its how you want it. And then taste and season. Season to your liking. Personally, I like garlic salt and pepper in mine. Sometimes I might add some onion powder, but not normally
