Turn Leftovers into a Hearty Soup: Delicious Recipe for Minimizing Waste

Recently, Daniel tried cooking a pork roast for Christmas eve dinner, complete with even making the glaze himself as well. That also meant we had a BUNCH of ham leftover when it was all said and done. And I used as much of it as I could, carefully slicing as much as I could off the bone, and even saving the bone to make a batch of Ham hocks and beans.

But I still had ham to use up. And then I remembered I still had potatoes to use up too. And Carrots. And Peppers….It was a no brainer at that point. Ham and Potato soup! Daniel is typically not a fan of potato soup. But I was hopeful that if I put the ham, plus whatever cheese I had, plus extra veggies, that it would taste better in his perspective.

Ingredients

All of these ingredients I already had on hand. Many of the veggies used were getting to the point of needing to use or throw away. This recipe is versatile, so its easy to change up the ingredients.

  • 5-6 Potatoes
  • Bell Pepper
  • Carrots
  • Chicken Broth
  • Better than Bullion Veggie Base
  • Onions
  • Garlic
  • String Cheese (in a perfect world I’d prefer cheddar)

Directions:

Start off by putting 1tbsp of butter or oil into your stockpot. Your gonna cook down the carrots, peppers and onions. This is when I added the better than bullion base. Honestly, I did it just to see how it’d turn out, as I didn’t have enough chicken bullion.

Once the onions are starting to turn translucent, add in your chopped potatoes and broth, or water and bullion. After that, let your potatoes cook. I don’t time it, but depending on how big or small your potatoes are, I’d say 30 minutes to an hour if you do really big chunks.

Once your potatoes have cooked through, your gonna want to puree everything, and put it back in the pot. This is t he point where I’ll add in the ham that i chopped up, cheese, and the buttermilk, letting it cook for 3-5 minutes to marry once everything is added.

I urge you to give this soup a try! Personally, I love that it used up a few things of leftovers.
