Cucumbers are one of those summer veggies that just hits the spot. And recently, I’ve been craving them so much, I’ll typically have them for my lunch at work, or as a side dish to go along with dinner.
There are so many variations of different cucumber salads, such as the cucumber and tomato salad I gave a recipe for a while back. That one was my go to for a good long while until recently, when my craving became a vinegar based cucumber salad. And its so easy, its the perfect recipe to get those kids in the kitchen who have been itching to learn a recipe or two.
Ingredients:
- 2 Cucumbers
- 1/3 cup white vinegar
- 1/4 cup warm water
- 1 teaspoon sugar (optional)
- 1 teaspoon table salt
- 1/2 cup red onion
- Pepper (optional)

Directions:
Start by slicing the cucumbers and onions. You can do this with a knife of a mandolin. put them in a container and get a bowl or big measuring cup for your liquid.
Start by measuring and pouring the vinegar in the container your using to make the dressing. When you add the water, make sure it is warm so it melts the salt (and sugar if you add any). Once your liquid is all made up and the salt is disolved, pour over cucumbers, seal with plastic wrap or a lid and put in the fridge for 6 hours before serving.
I like to make mine for lunch, and I’ll typically ,make it the night before so it has all night and part of the next day to marinade and get all those good flavors together.
