End of the Month Quesadilla’s
It’s the end of the month. You got a little bit of this and a little bit of that. Maybe you could do tacos. But maybe you don’t’ have all the toppings you really like on them.
In my case, that was it. I had one pound of hamburger in the fridge, Some Corn Tortillas that had to be used up or they were going to be turning even more brittle. I also had like a chunk of cheddar cheese left.
I wasn’t sure what to expect. I usually always make quesadillas with flour shells, never corn.
Ingredients:
- 1lb Ground Beef
- 1 Taco Seasoning Packet
- 3/4 cup water
- Cheddsar Cheese, Grated
- Tomatoes (optional)
- Onions (optional)
Directions:
Brown ground beef and add taco seasoning as directed on packet. I used just the cheap Walmart Great Value brand, and added the 3/4 cup of water. Once the taco meat was cooked, I put it in a bowl and drained some of the extra sauce, but not all of it.
I took my first corn tortilla and put it in the pan that was cooking the meat in, adding the shredded cheddar cheese, some meat, (This is also when you would add anything else, tomatoes or onions for example) and then another layer of shredded cheese, topping it with another tortilla and letting the cheese melt and the tortilla brown a bit before flipping and getting the other side browned.
Once both sides were brown and the cheese is melted, take it off the pan and let sit for a minute or two before you cut, and if you have any Salsa, its a great addition. I am definitely going to add this to my regular dinner rotation, and maybe even try to change it up a bit.
