Instant potatoes aren’t a favorite in my house. But we have LOADS that were given to us by some family. And I love trying new ways of reinventing things my family doesn’t like, hoping to turn that around. Any time I’ve tried mashed potato pancakes in the past, they have a tendency to fall apart, or just not taste right. But I didn’t give up!

Typically when I can’t get something right, I keep trying, but I’ll look up different recipes, because eventually I’m bound to find one that works. Finally, not only did I find one, I found one which is using mashed potatoes made with potato flakes instead of real potatoes. Which is typically where my problem lies. My family isn’t huge on mashed potatoes, so its a very rare occasion where I made them from scratch, epically considering we have SO MANY potato flakes.
I liked the flavor profile on these. They weren’t too salty, and were delicious on their own, but paired with some fry sauce, it was also pretty delicious. And were so simple to make!
Ingredients:
- Leftover Mashed Potatoes
- 1 egg
- Breadcrumbs
- Flour
- Oil for frying
Directions:
Take out the mashed potatoes around 15 minutes prior to mixing and frying. Mix the egg and flour in the leftover mashed potatoes.
The amount you need will just depend on how much mashed potatoes you have. I had approx. 2 cups of mashed potatoes left over, and used 1 egg and about 1/2 cup of flour.
Once you form the patties, I coat them in breadcrumbs and fry them on a cast iron in lard. About 6 minutes on one side, 3-5 on the other depending on your heat. I fried mine on medium.
