Recently after I quit my job to stay home with Miss Dani, I joined some mom groups. One of the group is all about giving new life to things your getting rid of by posting it in the group. If any other moms want it, it’s yours. Well, one mom did the with 2 bags of canned food. At the time our pantry was getting pretty bare so I scooped up the two bags. In it was canned tomatoes, corn, peaches, and one can of ‘Pork with juices’.
Well, I had seen Spam, and canned meat, but something bout the ‘with juices’ part was making me gag. Daniel told me not to get rid of it, and to save it for an emergency. I reluctantly put it in the back of my pantry, vowing to never open that can if I could help it.
Now, don’t fret. Because if I truly thought I was in that bad of a predicament, I’d be hitting up my mom’s pantry for anything. But I was scrolling tick tock and noticed someone opening up a can of ‘pork with juices’ and did it look good? I mean no but the meal she made with it did! I decided to overcome my disgust and started piecing together dinner for that night. We had no bread, and I remember my mother law telling me that she’s made BBQ pulled pork with it before. But no bread. But we did have 10 lbs of potatoes.

I decided on a loaded bbq pork baked potato. I had the sour cream, chives in the back yard, and over half a brick of cheese waiting to be used. And according to my husband if he can put a bunch of cheese on it, he’ll eat just about anything. It was worth a shot, and if nobody liked it, I would be sure to remember that and do something else with the pork next time.
Ingredients:
- Canned Pork (drained) 2 cans.
- BBQ Sauce 1 Cup or to taste
- Baked Potato
Directions:
Preheat oven to 400 degrees and bake your potato. I personally like to poke a hole in my baked potato, add oil and salt to the outside and wrap it in aluminum foil. It takes approximately 1 hour to cook depending on the size of your potato.
Gather ingredients and make the bbq sauce. If you’re using store-bought, open the cans of meat and drain any juices and remove any large chinks of fat. They will be white snd very noticeable. Once drained, add to slow cooker and break up the can shaped solid blob of meat. Pour generous amount of BBQ sauce and turn slow cooker on high for 3-4 hours or low for 5-6 hours. Everything in here is all cooked, so we just want to get the ingredients to spend some time together and get real friendly with one another.
I wait until the consistency of the meat and bbq sauce to be thick, but saucy. Almost the same consistency of sloppy joes, but just a smidge thicker.
When the potato is done, cut and add butter, meat and we like topping it all with my homemade savory coleslaw.

Daniel enjoyed it, even asked for seconds. Elizabeth also seemed to enjoy it. Vito ate it, but he’s not the biggest fan of bbq pork, so he wanted more coleslaw instead. All in all this recipe was a success because it tasted good and because I will no longer be afraid of ‘canned meat…with juices’
