Quick 2 Bean Salad
Where I’m from, it gets hot. Like stupid hot. The kind of hot that makes you want to crawl into the freezer to get some relief. With the summer, comes a lack of appetite for my husband and I. It will get just so hot that we just don’t get hungry. That means I have to think of stuff that’s easy to do, and if its cold to eat, that’s even better.
What gave me the idea is the massive amount of canned green beans I seem to have had in the fridge, as well as Daniel giving me a hard time about the Italian dressing I bought. This salad is traditionally called a 3 bean salad, but I only had 2 of the required 3 beans.
Traditionally, 3 bean salad has the following ingredients:
- Green Beans
- Wax Beans
- Garbanzo beans (aka Chickpeas)
- Red Kidney Beans
- Onion
Italian dressing to taste
My version, due to what I have in my pantry is going to be the following:
- Green Beans
- Red Kidney Beans
- Zesty Italian dressing
I’m making this for my work lunch, so I don’t really mind that its basic. As long as its good enough to me to eat, its a success. And to be expected, it tasted about how I knew it would, the best part being that it really hit the spot on a really hot over 100 degrees day in Northern California.
