I was given more lemons. Honestly I’m sure this could be a never ending supply if I play my cards right. Thankfully, I’ve got my kitchen in a pretty maintainable state right now, so I’m able to take some time and make some really good stuff. And the Lemon cookies from the previous lemon post? My goodness my husband loves those!

Lemon Muffins
Since I’ve been home, I’ve been ensuring that my husband eats, and on days he leaves for work early, sometimes he needs just a quick bite. If its too early in the morning, he has to force it down typically. But having Hypoglycemia, he also knows he needs to keep his blood sugars in check. He loved the lemon cookies, so I figured these Lemon muffins would be perfect.
Ingredients:
- 2 Cups Flour
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 3/4 Cups Sugar
- 2 Large Eggs
- 3/4 Cups Buttermilk or Milk
- 1/2 Cups Butter (melted)
- Zest from 2 Lemons
- 1/4 Cups Lemon Juice
Glaze:
- 1 Cup Powdered Sugar
- 2/3 Tablespoons Lemon Juice
Directions:
Combine all the dry ingredients. In a separate bowl, add Buttermilk, Eggs, and lemon juice. Stir together. Zest 2 lemons and add the zest to the dry ingredients. Add the wet ingredients into the dry and pour in the melted butter. Mix.
Add to paper lined muffin tins, and bake at 375 for 18-23 minutes or until a toothpick inserted into the middle comes out clean.
For the glaze, Add lemon juice to 1 cup of powdered sugar and mix. Drizzle over cooled muffins.

Lemon Cobbler
Because this recipe was so simple, I decided to make it the same day I made the muffins. I figured my family would appreciate a dessert to go along with the dinner we were having. I had never made a cobbler before, so I also enjoyed the experience of making it for the first time.
Ingredients:
- 1/2 cup Butter
- 1 cup Flour
- 1 cup Sugar
- 2 tsp Baking powder
- 2 tsp Salt
- 1 cup Milk
- 1/2 cup Lemon Juice
- Zest from 1 Lemon
Directions:
Melt butter in 350 degree oven; its best to use a 9×9 or 8×8 size pan. When melted, pour in the flour, sugar, baking powder and salt mixture. Add Milk, Lemon juice and zest. Bake for 35-40 minutes.
Lemon Pepper
This one requires a food dehydrator, but is so worth it! While I was experimenting with my new dehydrator, I made Onion Powder, which was one of my big reasons for buying it was to make seasonings. Slice your lemons and add to your dehydrator. Depending on how thick or thin you slice your lemons is how long they will take to dehydrate. Typically anywhere from 4-12 hours or so. Once you can snap them in half easily they are done. In a coffee grinder/food processor/blender grind them up into a fine powder and then add pepper, and you have homemade lemon pepper to use to season chicken or fish!

Fun Fact: Both the lemon cobbler and lemon muffins were both made using homemade butter!
