My son loves banana. But after a couple days of eating them he looses interest in them, so I typically will always have 2-3 frozen bananas in the freezer if not more. I’ve posted a couple recipes on this blog that use frozen bananas, and what drove me to make this one is something that happened at like 2-3 in the morning.

For those that are new here, my husband works in the tech field, but also does hard manual labor. He can go from wiring up security cameras for a dollar store, and then the next day he might be building a shed or tossing logs around. When I say he’s a jack of all trades, he truly is. Look it up in a dictionary, there’s going to be a picture of my husband right there. Needless to say theirs days he comes home aching, or limping.

Well, around 3am one morning I woke up feeling the bed swaying, and not the typical just getting up to use the bathroom type of movement. When I opened my eyes, my poor husband was grabbing at either his foot or leg in obvious pain. He’s gotten cramps in both his foot and leg before, so I didn’t think anything of it until the next morning when I realize he typically doesn’t wake up because of it (my dad however, would ALL THE TIME)

So the next morning while I had my broth going, and my butter made, I whipped up this banana bread recipe, thinking the man loves bread, and I hardly ever see him eat a banana, but I know he’ll eat the banana bread, epically if I toss some pecans or walnuts in there. Well, it was also a great reason to maybe look for a banana bread recipe in one of my many cookbooks instead of doing a google search like I typically do.

Ingredients:

  • 1 3/4 cup Sifted All purpose flour
  • 2 TSP Baking Powder
  • 1/4 TSP Baking Soda
  • 1/2 TSP Salt
  • 1/3 Cup Shortening
  • 2/3 Cup Sugar
  • 2 Eggs
  • 1 cup Mashed Bananna
  • Nuts (optional)

Directions:

Preheat oven to 350

Now, I’ll preface this by saying I did not realize until after the fact that I did not mix the batter the same way the book instructs.

I gathered all my dry ingredients sifted together. In the bowl with the mashed banana I added the eggs and shortening. I then incorporated all my dry ingredients into my wet and mixed it all together. Once that was all done, I added the nuts and gave it a couple additional stirs before adding it to my greased loaf pan.

Bake for 1 hour.
